Kim’s recipes are everything I love about cooking. She uses only real whole foods. Even in her gluten free recipes there are no starchy fillers. If it does not have nutritional value she is not putting it in her food!
The recipes do not create a big messy dirty kitchen with lots of dirty dishes! (I am lazy and would rather not use even measuring spoons if I can help it.)
Her ingredients are easy to find, you don’t have to order them online. (This is good when I decide last minute I want to make something, I’m not one to plan ahead too far.)
They are easy to follow, no complicated steps or tools required. (again I am not a plan ahead gal, I hate when a recipe requires refrigerating for an hour or overnight.)
They are delicious and nutritious most of all! My children use to think they didn’t like vegetables or fruit. Now in the mornings they enjoy fruit smoothies for breakfast. Green salad is now their side dish of choice at dinner. If we go out to eat at a restaurant, they ask if they can order a salad with their meal.
Kim’s book is full of extra information besides recipes too. She has a pantry list and menu planning info. She eliminates most common allergens in all of her recipes so they are perfect for people with food allergies, but they are delicious enough that those without food allergies won’t even know they are “safe.” She talks about the cost of eating healthy, the benefits of eating whole foods, what are whole foods. This cookbook is the perfect combination as it includes breakfast, lunch, dinner, snack and dessert recipes. Her easy conversational style and introductions make you feel like you are sitting in her kitchen as she whips together the meal. And the ebook format means you can print your favorites and add them to your own personal cookbook. I am sure they will all become your favorites though
I can’t say enough good things about Kim’s cookbooks! And Good and Easy Eats is the perfect introduction to healthy eating for those looking to change their diet for the better. I am so thankful that we have her books as a resource as we are still navigating the waters of food allergies. I love that our whole family can enjoy the same wholesome foods together.

. . . I’m extremely picky when it comes to a food allergy cookbook. I believe it must be simple, have non crazy ingredients, be helpful and full of tips, and not cost a fortune. Friends, this one delivers. It’s an eBook which cuts down on costs and makes it super easy to have with you in the kitchen. Just pull it up on your laptop, phone, or tablet and you’ll have all the recipes at your finger tips.
The recipes are simple and easy to follow. They use easy to find ingredients that are frugal and tasty. I absolutely love the way Kim approaches the subject of eating a whole foods diet. She blends the allergy free issues right into the wholesome eating; seamlessly connecting the two. All of the recipes are gluten free but she includes a note at the bottom of each one telling us what to do if gluten and wheat are not issues for us. How awesome is that?!?
The recipes are super easy and accessible to all of us.
This is seriously a dream come true food allergy cookbook. I’m in love!

Kim says she has been working with whole foods for 12 years. Since then her husband was cured of Meniere’s disease, was able to get off high blood pressure medication and “accidentally” lost over 100 pounds! You can read their personal story and see some amazing before and after pictures.
Kim gave me a copy of Good and Easy Eats Ebook to review before its December 10th launch and I have to say, I am impressed! All 70 of the vegetarian recipes are dairy-free, egg-free, soy-free, yeast-free, wheat-free and gluten-free. There are a handfull of recipes that call for nuts but they are usually optional. There are no refined oils or sweeteners listed, and most of the ingredients can be found at your local grocery store.
Cooking allergy-free often requires a great deal of creativity and Good and Easy Eats does not disappoint. There are several innovative and impressive sounding recipes including a variety of muffins, biscuits and lentil cakes. There is even a recipe for allergy-friendly biscuits and gravy!
Good and Easy Eats would be a goldmine to a new cook. It contains quite a bit of teaching including several how-tos such as how to cut an onion, how to make a green salad or fruit salad, and how to cook dried beans or rice. Did I mention there are 70 recipes?
Not only were the recipes intentionally kept simple for easier preparation, they are packed with nutritional value and flavor, and will certainly satisfy every member of the family, on a special diet or not.

Good and Easy Eats, an e-book by Kim Wilson, is a collection of simple, family pleasing recipes that are actually good for you. I chose a few recipes to try this week: Potato Corn Chowder, Seasoned Popcorn, Carmel Corn, Chocolate Cake, Chocolate Meltaways, and Oatmeal Raisin Chocolate Chip Cookies.
The Seasoned Popcorn was delicious. That one will be a favorite for Friday movie nights at our house. The best recipe I tried was the Oatmeal Raisin Chocolate Chip Cookie recipe. I didn't think it was possible to make a cookies without sugar or eggs and have them turn out good. I hesitated to try them because I didn't want to waste my honey on a batch I'd be throwing away, but they were delicious! I'll make them again and again.
Good and Easy Eats is not just a recipe book. It is filled with helpful information on stocking a basic pantry, menu planning, making the transition to wholesome foods, how to decide what to buy organic, baking tips, salad making tips, how to cook beans from dry and other useful information. There are also links throughout the book for more ideas and recipes. I love Kim’s simple approach. In looking through Good and Easy Eats, I feel so confident that I can handle it. I don’t feel overwhelmed. Do you know the feeling? Sometimes as I glance over recipes, I get tired just reading all the steps, so I file it away, hoping some special occasion will give me the oomph I need to create it.
Kim’s top two goals of flavor and nutritional value is plain to see as you browse Good and Easy Eats. A self-described simple (“bordering on lazy”) cook, you don’t have to worry about spending lots of time in the kitchen.
The benefit of an ebook is you get links to more resources! Kim includes links to thrifty shopping tips, how to improve digestion of beans, and how to prioritize organic purchases (and more!).
I don’t know about you, but I like to print out my ebooks. I slide the pages in page protectors and keep in a 3-ring binder. This is really the best system I have found for keeping my recipes clean and wrinkle-free. I can splatter the page with tomato sauce, wipe clean, and it’s as good as new.

Who could not use a collection of everyday recipes that are not only healthy, but truly tasty, too? And, better yet, since so many of us have friends or family members that face food intolerances and allergies, who would not appreciate a collection of go-to recipes that are gluten-free, wheat-free, dairy-free, egg-free, soy-free and yeast-free?. . . That is exactly what Good and Easy Eats is: a go-to guide for feeding family and friends every day, regardless of common allergies and intolerances.
A * for PRACTICALITY
One of my goals for the new year is to finish a family cookbook – a three-ring binder to house all of our family’s new favorite GFCF recipes for every day as well as special days. The fact that Good and Easy Eats is an e-book will make doing so easy for me. Since there are so many recipes in it that we like, I can simply print favorites out and place them in the binder. Also, if a recipe gets egg, batter or oil on it – as sometimes happens to recipes in our home since my children often act as junior chefs – I don’t need to be chagrined. I can just print another page! That’s pretty practical in my opinion.
A * for LONGEVITY
Even if our GFCF experiment in the new year goes bust, I know we’ll continue using Good and Easy Eats. The recipes in it are ones we enjoy simply because they are healthy, whole and tasty. The fact that they are intolerance-friendly is simply a bonus!
A * for VALUE
At $4.95, Good and Easy Eats is priced not only to sell, but also to help! In my opinion, budgets won’t be broken by this low-cost, high-use cookbook and bellies will be happily filled. . . I recommend Good and Easy Eats not only for anyone who wants a great resource for everyday home cooking, but also for anyone who wants to share a collection of allergen-free recipes for family or friends to use.
